NEWS 25 FRIDAY, MARCH 13, 2015 MILDURAWEEKLY.COM.AU MILDURA’S Kim Chalmers, PIC- TURED, has been featured in a new cookbook, Planet to Plate, to help celebrate Earth Hour on Sat- urday, March 28. The Earth Hour Cookbook a collection of 52 recipes from Aus- tralia’s biggest culinary names, and in what is said to be an Australian publishing first, Planet to Plate will incorporate stories from farm- ers like Kim, highlighting the im- pact that global warming is having on their farms, and the nation’s availability of fresh, home-grown food. The comments come from 60 farmers the length and breadth of the nation, across a range of indus- tries, while the recipes are courtesy of culinary greats, including Matt Preston (MasterChef), Neil Perry, (Rockpool, Spice Tem- ple), Kylie Kwong (Billy Kwong), Guy Grossi (Grossi Florentino), Darren Robertson (Three Blue Ducks), Luke Mangan (Glass Brasserie), Colin Fassnidge (4Fourteen), Ben Shewry (At- tica), James Viles (Biota Dining), Jill Dupleix, Miguel Maestre (Ch 10’s The Living Room), Margaret Fulton, Dan Hong (Ms G’s) and Sarah Wilson. Their carefully chosen recipes feature seasonally fresh produce for appetisers, main dishes and desserts, from Grossi’s Ravioli Ru- cola, Perry’s Spanish-style Chicken Casserole and Fassnidge’s Lemon Verbena Parfait with Apple and Ginger Juice and Honeycomb, to Maestre’s renowned Banoffee Pie and Dupleix’s Sashimi Salad with Passionfruit and Wasabi. The cookbook has been de- scribed as an important feature of the Earth Hour initiative, which will celebrate both food and farm- er, and reminding Australians of the need to tackle global warming for the sake of rural communities and the supply of fresh, healthy and home-grown food to our door. On the front line Anna Rose, national manager of Earth Hour Australia and Aus- tralian Geographic Society Conser- vationist of the Year, said all Aus- tralians were proud of farmers for feeding the nation, but they were on the front line of global warm- ing, and already feeling the effects of higher temperatures, changing rainfall patterns and more extreme weather. She said the launch of Planet to Plate was an innovative way to remind Australians of one of the strongest reasons to take action to tackle global warming... our food. “Besides being a collection of the very best recipes from the country’s top chefs, Planet to Plate will highlight the fact that global warming is already affecting pro- duce we enjoy in our everyday lives, including fresh vegetables, cereals, bread and fruit,” she said. “Our much-loved farmers are the custodians of the nation’s food bowl, and need our support to mi- nimise the harm carbon pollution is having on the supply of fresh food that we are so lucky to enjoy in Australia.” Digital version too Planet to Plate, The Earth Hour Cookbook is available online from www.earthhour.org.au/cookbook for $49.99, with a shorter, digital ver- sion be available for download free. Proceeds from the cookbook will support Earth Hour’s work with schools, small business and community groups. Kim Chalmers features in the section sub-titled Agro-climatic re- gions. She describes Mildura’s des- ert climate, with the cooler nights important for grape growing, as warm nights affected grape quality. “We have noticed a lot more heat waves, and when you get a hot spell with really hot nights, that can impact the crop,” she said. “Heat waves can also mean sunburn or direct radiant heat that damages the berries. You need to consider the kind of canopy you grow...you need lots of leaves to shade and protect bunches from the sun.” Earth Hour will take place from 8:30pm on Saturday, March 28. Last year, one in three Austra- lians took part, turning off lights to show their support for cutting carbon pollution and tackling global warming. Earth Hour began in Sydney in 2007, initiated by WWFAustralia to raise awareness of the effects of climate change, with 2200 busi- nesses and more than two million people taking part.
