6 NEWS MILDURA WEEKLY FRIDAY, JANUARY 6, 2017 SUNRAYSIA is now home to its first gin distillery, thanks to the innovation of Mildura business- man Steve Timmis. Owner of Mildura’s iconic Setts Bar and Function Centre, Steve said producing a boutique liquor inside the business was something he had been consider- ing for years. “I’ve been thinking about making whiskey and rum and that will still probably happen, but I looked into gin and the pro- cess suited me, and it suited the area,” he said this week. ‘Fossey’s Gin’ is produced and labelled at the Eighth Street building using a custom-made distillery that can be viewed from the bar.
